I'm a 20 year old junior in college, trying to promote a healthy life style for myself and others, which can definitely be hard to do in college. In this blog, I'll experiment with recipes, blog about my own progress towards body wellness inside-and-out, and hopefully help some of you out along the way! Last summer, with a month of exercise and eating right, I lost my freshman 15. Over the past year, I have been maintaining my weight and continuing to hone my healthy cooking skills!

Apple Maple Cinnamon Mug Muffin (115 calories, 8g protein!)

I think I may have perfected the mug muffin recipe with this one, you guys. It’s so MOIST and delicious! Not to mention, because it’s made with oatmeal and egg whites, it’s cheap, easy, AND filling. Also. It tastes like dessert. So try this. Now.

INGREDIENTS:

  • 1/4 Cup Oatmeal (75 cals, 3g protein)
  • 1 Tablespoon Water
  • 3 Tablespoons Egg Whites (25 cals, 5g protein)
  • 2 Tablespoons unsweetened applesauce (12.5 cals)
  • 1/2 Tablespoon Smucker’s Sugar Free Syrup (2.5 cals)
  • Cinnamon (to taste)

DIRECTIONS:

In a large microwavable mug, combine all of the ingredients and stir well. Heat in microwave for 2 minutes (or until thoroughly cooked.) Empty onto a plate or eat it right out of the mug! Enjoy!

This was part of my pre-workout breakfast this morning, An Apple Maple Cinnamon Mug Muffin! I’m serious you guys, I made I have perfected the Mug Muffin recipe with this one. It was SO MOIST and delicious that it was like dessert for breakfast, and it was packed with 8 grams of protein!
Not to mention it was only 115 calories AND it took 2 minutes to make.

Chocolate Peanut Butter Mug-Muffin! (205 cals, 19g protein!)

Want a super sweet yet fillling dessert-y breakfast? Want it in under two minutes? Want to know if that’s even possible? Well, it is! This Chocolate Peanut Butter muffin is so tasty, it’s hard to believe it’s really good for you with only 205 calories and 19g of filling protein. The best part? It’s made in the microwave. So you can have your breakfast in  minutes! Great for the morning rush!

[Below is a picture of the WHOLE RECIPE—my muffin was so big I had to cut it in half.]

INGREDIENTS:

  • 1/4 Cup Plain Oatmeal (75 cals, 3g protein)
  • 1/2 Scoop Chocolate Protein Powder (55 cals, 8g protein)
  • 1/4 Cup Egg Whites (30 cals, 6g protein)
  • 1 Tablespoon Better n’ Peanut Butter (50 cals, 2g protein)

DIRECTIONS:

Spray large microwavable mug lightly with PAM (not necessary, but helps with cleanup.) Combine all ingredients in mug and stir well. Pop in the microwave for 2 minutes. (Watch the mug carefully, muffin may rise A LOT—if mug looks like it’s going to overflow, just pause the microwave for a moment, let it sink, and continue cooking.) Enjoy!

This morning I made a super-filling breakfast of champions: A Chocolate Peanut Butter Protein Muffin! It was so big, that I had to cut it in half. Above is the “finished product.” This baby is 205 calories and contains a whopping 19 grams of filling protein! Also, it tastes delicious. Warm, moist, chocolatey, and peanut buttery.  The best part? It took 2 minutes to make…cause I made it…in the microwave!

155 cal Peanut Butter Mug-Muffin!

I woke up a little late today, so I needed to make a filling, nutritious, and most importantly, FAST breakfast before my workout. This 155 cal peanut butter oat mug-muffin, packed with 10g of protein, was the perfect solution! Three hours later, and I’m still not hungry!

INGREDIENTS:

  • 1/4 cup liquid egg whites (30 cals)
  • 1/4 cup plain oatmeal (75 cals)
  • 1 Tablespoon Water
  • 1 Tablespoon Better n Peanut Butter or Peanut Wonder (50 cals)

INSTRUCTIONS:

  • Combine all ingredients in a large microwave safe mug and stir well. Pop in the microwave for 30 seconds, stir, and put in microwave for another minute, or until thoroughly cooked! Enjoy!

107 Calorie Chocolate Coconut Bread Pudding Mug-Cake!

This warm and gooey treat tastes just like your favorite bread pudding, only it’s low in calories (107 for the whole recipe!), high in volume, and takes all of 2 minutes to make! Tell you tongue to stop watering so you can focus on the recipe!

[I got this recipe from hungry-girl, and then cut it in half, using a couple different ingredients for nutrition benefits (egg whites and whole wheat bread)! This one piece was so big on it’s own, I can’t IMAGINE what two would be like!]

INGREDIENTS:

  • 1/2 of a 20 or 25 calorie diet hot cocoa mix
  • dash salt
  • 1/4 cup egg whites
  • 1/8 tsp. coconut extract
  • 1 slice light 100% Whole Wheat bread
  • 1/2 tsp. mini semi-sweet chocolate chips
  • 5 mini marshmallows

DIRECTIONS:

1) Heat up 2 tablespoons water in a large microwavable mug for one minute. In a separate cup, combine cocoa and salt. Add water to glass and stir until cocoa dissolves. Add egg whites and coconut extract. Mix well.

2) Spray a large microwavable mug lightly with nonstick cooking spray.

3) Toast bread in toaster and then tear bread into cubes, placing cubes into mug. Pour egg-cocoa mixture from the glass into the mug (covering the bread cubes.) Stir gently so that the bread is thoroughly soaked. Top with chocolate chips and marshmallows.

4) Microwave for about 2 minutes, until pudding is set. Indulge!
