I'm a 20 year old junior in college, trying to promote a healthy life style for myself and others, which can definitely be hard to do in college. In this blog, I'll experiment with recipes, blog about my own progress towards body wellness inside-and-out, and hopefully help some of you out along the way! Last summer, with a month of exercise and eating right, I lost my freshman 15. Over the past year, I have been maintaining my weight and continuing to hone my healthy cooking skills!

Don’t you love crunchy, carby, cheesey, hot things? Don’t you hate the added bad fats and calories that come along with them? I do too. So, instead, try making these delicious “Mozzarella Sticks” for only 160 calories!

INGREDIENTS:

2 slices 100% Whole Wheat Sara Lee Delightful Bread [90 cals]
1/4 cup low-fat shredded mozzarella cheese [70 cals]
1T Marinara Sauce for dipping (optional) [10 cals]
DIRECTIONS:

1) Toast bread in toaster till they have a desired crunch.

2) Sprinkle cheese on one slice of bread and top with the other.

3) Zap in microwave for 20 seconds.

4) Munch on, foodies, munch on!

  • 2 medium stalks celery, cut into smaller pieces
  • 1/8 cup reduced fat feta cheese
  • 1/8 cup shredded mozzarella cheese

DIRECTIONS:

  • Put cheese on celery, and microwave 30 seconds. Enjoy the cheesy crunch!

200 Calorie Vegetarian “Beef”y, Cheesey, Pasta Italian Madness!

To preface this post, I’d like to just say THIS WAS DELICIOUS. And filling, and satisfied so many cravings. And at 200 calories for a whopping 2 cups full, let’s just say I was very pleased. 

INGREDIENTS:

  • One whole bag Tofu Shirataki Noodles (I used the angel hair shape) [40 cals, 2g protein]
  • 1/4 cup low fat shredded mozzarella cheese [70 cals, 9 grams protein]
  • 1/2 Cup Boca Ground Crumbles [60 cals, 13g protein]
  • Chopped veggies [I used some onion, peppers, and spinach]
  • 2 teaspoons reduced fat parmesan cheese [20 cals]
  • 1 Tablespoon Marinara sauce [7 cals]
  • 1/2 Tablespoon I can’t believe it’s not butter [2.5 cals]

DIRECTIONS:

1) In a skillet over medium-high heat, cook Boca crumbles for about ten minutes, stirring occasionally. [Do the following steps while they are cooking]

2) Drain and rinse noodles, and put just noodles in microwave in microwave safe bowl for 1 minute. Drain them again and pat them dry. Place back in bowl.

3) Add mozzarella, veggies, and butter to noodles. Microwave another minute. Stir well

4) Add Boca crumbles and marinara sauce. Microwave another 45 seconds. Sprinkle with parmesan cheese. Enjoy!

Warning: May cause you to die of happiness.

PS. I want a better name for this recipe. Does anyone have any ideas?
