I'm a 20 year old junior in college, trying to promote a healthy life style for myself and others, which can definitely be hard to do in college. In this blog, I'll experiment with recipes, blog about my own progress towards body wellness inside-and-out, and hopefully help some of you out along the way! Last summer, with a month of exercise and eating right, I lost my freshman 15. Over the past year, I have been maintaining my weight and continuing to hone my healthy cooking skills!

75-Calorie HOT COCOA Cupcakes!

These are easily one of my favorite recipes I’ve ever made. The nutmeg and cinnamon makes them taste like a gourmet hot chocolate, and the use of greek yogurt instead of oil makes them super melt-in-your-mouth moist, in addition to making them healthier! Each cupcake has only 75 calories, so I didn’t hesitate to load them up with delicious icing. (Though in the future to keep them lower-cal, I might try melting a marshmallow on top, to complete the Hot Cocoa effect!)

Ingredients: 

Makes about 24 cupcakes!

-1 box Devil’s food cake mix (1600 cals)

- 1/2 cup egg whites (60 cals) [or you can just use 2 eggs—140 cals]

- 1 & 1/3 cups water

- ¾ cup plain Greek yogurt (100 cals)

- ½ tsp vanilla extract

- 4 Tbsp. Unsweetened cocoa powder (60 cals)

- 1 tsp ground cinnamon

- 1 tsp nutmeg

 [(1600+60+100+60)/24= about 75 calories!]

Directions: Preheat oven to 350 degrees. Mix all of the ingredients in well in a large bowl. Pour into cupcake liners and bake for about 20-25 minutes. **For cupcakes with a great rise, turn oven down to 325F after putting in cupcakes and bake the same amount of time. 

It’s as easy as that! Enjoy!

Delectable Drink: Cinnamocha! (12oz, 45 calories!)

Want a warm and sweet coffee drink that rivals those of Starbucks? Want to make it in your microwave and avoid all those excess calories? Sure you do. Now you can! So do it. Cause your tongue deserves a treat.

INGREDIENTS:

-1 cup water

-1/2 Cup Unsweetened Chocolate Almond Milk (20 calories, 1g protein)

-1 Packet Diet Swiss Miss (25 calories, 2g protein)

-1-2 teaspoons Instant Espresso coffee (0 cals)

-Cinnamon (to taste)

-Top with some small marshmallows (optional)

DIRECTIONS:

Mix water and almond milk and heat in microwave for 2.5 minutes, or however long it needs to heat to warm water. Mix in Espresso powder and Diet swiss miss. Sprinkle with Cinnamon. Enjoy!

While walking to the gym, it was chilly outside, and while on the elliptical, I fantasized about the remaining bit of unsweetened chocolate almond milk I had in my fridge and the packets of hot chocolate that have been sitting unused in my desk drawer. When I got back to my room, I got even more creative, and the “Cinnamocha” was born! I’m telling you, this thing is so delicious. I can’t wait to make more when it gets even colder outside!
